I don't exactly what to tell you, but I'll give it a shot. For me, personally, if I want to write a non-shallow character, I start by thinking of a complex character arc. (i.e., values, emotions, methods, etc.) After I've established this, I can then add minor things to a character, such as quirk or wit, or whatever. I also find that using actual people as a source is excellent. I don't mean like obsessively watching a person, but take in consideration everything people do. Move, talk, respond, etc. Examine them carefully and you'll find that after so, writing a complex character will be that much better. I can't think of anything else. Maybe someone else will give you more.
