Hi! I'm wanting to apply for a Screenwriting MFA and have narrowed it down to 8 schools that I'm interested in. I'm probably not going to apply to all 8, but I was just wondering how many programs most people apply for?

It varies, but you should not *assume* you will get in anywhere. This process is notoriously subjective and people get in places they thought they had no chance and get rejected from schools that were supposed to be shoo-ins. If a program appeals to you and you can see yourself going there, then assuming you can afford to apply I'd do it.
